Vanilla Cupcakes recipe
The classic vanilla cupcake is the best way to go if surprising someone you don't know that well or if you are taking these to a kid's party. Everyone likes a vanilla cupcake! You can also try livening these up by filling them with different jellies, chocolate sauces, or puddings.
Ingredients:
- 3 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cups butter, softened
- 1 3/4 cups sugar
- 2 eggs
- 1 1/4 cups milk
- 1 teaspoon vanilla
Directions:
Preheat oven to 350F. Line 2 dozen cupcake tins with papers.
Sift together the flour, baking powder and salt into a bowl.
In a large bowl cream together the butter and sugar with an electric mixer until fluffy.
Add eggs one at a time mixing well after each.
Add the vanilla.
Alternately add the flour mixture and the milk into the butter and eggs, making sure to fully incorporate.
Pour the batter into the cupcake tins and bake for 15 to 20 minutes or until a tester comes out clean.
Let cool completely before frosting.
